I love making kale chips in the oven. But when I’m not using my kale to do that, I like to eat it raw. Kale is a slightly bitter green, but some lemon juice, garlic, and salt help remedy that.
This kale salad is a really easy recipe that only uses six ingredients. Raw food enthusiasts will love it. You get a healthy dose of good fats, vitamins, and nutrients. And best of all, no artificial, processed ingredients.

- 1 bunch organic kale
- 2 T raw, unsalted sunflower seeds
- 1 T lemon juice
- 2 cloves of garlic
- 3/8 tsp. salt
- 1 T olive oil
Use a knife to remove the kale stems. Chop the leaves into 1-inch pieces and put into a large mixing bowl. Add the sunflower seeds, lemon juice, olive oil, salt, and minced garlic. Use your hands or a spoon to mix the salad together. Serve immediately.
