So of course, I’m always looking for ways to make a healthier pizza recipe that still tastes great. My Healthy Chicken Pizza was a success, so I thought I’d try something a bit different: a pita bread pizza.
I started with some whole wheat pita bread and threw in some sauteed onions and spinach, pizza sauce from Trader Joe’s, chicken breast, onion, tomato, brie cheese, and oregano.
Not to toot my own horn, but it turned out pretty awesome. Granted, this pita bread pizza recipe is a bit higher in calories than most of my recipes. But, it’s pretty much a complete meal, and contains a lot of veggies, protein, and fiber.
So here’s my healthy pita bread pizza recipe!

- 8 oz. boneless, skinless chicken breast
- 2 whole wheat pitas
- 1 medium onion (cut into thin strips)
- 3 cups spinach
- 1 tomato
- 2 oz. brie
- 2 tsp. oregano
Cook the chicken breast in a non-stick pan over medium heat for 4-5 minutes/side. Remove chicken breast and set aside. Add onion strips to pan and cook for another 4-5 minutes and add the spinach. Add 2 T water and cook another 2-3 minutes. Pre-heat your oven broiler to low. Toast the two pitas for 2 minutes. Cut the chicken breast into thin strips. Add the sauce, onions and spinach, tomatoes, chicken, and brie evenly onto the two pitas and cut each into fourths. Sprinkle oregano on top and broil for another 2-3 minutes.
