You may notice a trend in many of my salad recipes. I’m a big fan of throwing in a bit of fruit and some really good cheese. I like the balance of flavors you get. Every week I like to grab a fruit or vegetable that’s not a part of my normal arsenal, and kiwi just happened to be that fruit this week.
I used mixed greens that included some romaine, oak leaf lettuce, beet greens, arugula, frisée, and radicchio. Mixed greens are high in antioxidants and have anti-inflammatory properties. They’re really among the healthiest foods you can eat. Kiwi is a good source of vitamin C, fiber, and potassium.
I highly recommend getting a good parmigiano-reggiano cheese for this recipe. A little bit goes a long way of this flavorful cheese.

- 3 cups mixed greens
- 1 kiwi
- 1 green onion
- 1 T parmigiano-reggiano cheese
- 1 T olive oil
- 1 T Greek yogurt
- 1 tsp. Dijon mustard
- 1 tsp. honey
- Black pepper (to taste)
Peel kiwi and dice green onion. Set aside. Combine last five ingredients for dressing and refrigerate for several minutes. Add mixed greens, green onion, and kiwi and top with dressing, cheese, and some ground black pepper.
