For me, it doesn’t get much better than simple, healthy cooking. And that means choosing a few ingredients and letting them do the work. This lemon garlic chicken recipe is pretty straightforward. I cooked it on the stove but it’s equally as delicious on the grill. The nutrition facts are pretty impressive too: just 209 calories, 8 grams of fat, and 4.5 grams of carbs.

- 1/2 lb. boneless, skinless chicken breasts
- 1/2 onion
- 2 cloves of garlic
- 1 T olive oil
- 1 lemon
- 1/8 cup low sodium chicken broth
- 1 tsp. lemon grass
- 1/4 tsp. salt
Cook chicken in a pan over medium heat for 5 minutes/side. Set chicken aside, and add diced onions and olive oil to pan. Cook onions an additional 5-7 minutes. Reduce heat to low and add chicken back to pan along with minced garlic, salt, juice from lemon, chicken broth, and lemongrass. Simmer and reduce liquid for another 5 minutes. Remove chicken from the pan, let it sit for 5 more minutes, top with juices from pan and serve.
