Ingredients: Healthy Shrimp Recipe with Homemade Pesto Sauce
- 1 lb. uncooked shrimp
- 2 cloves of garlic
- 1/2 cup basil
- 2 oz. reduced fat cheddar cheese
- 3 T olive oil
- 1 T fresh lemon juice
- 1/2 tsp. kosher salt
- Black pepper (to taste)
1. Bring a pot of water to a boil. Add shrimp, cover, reduce heat to medium, and cook for 3-5 minutes. Drain and remove the shells and tails.
2. Combine the garlic, basil, cheese, olive oil, lemon juice, salt, and pepper in a food processor or blender. Blend on medium until basil and garlic are chopped consistently.
3. Add basil and homemade pesto sauce back to the pot and simmer on low heat for a couple minutes before serving.
