Why would you go to McDonalds when you can make your own healthy breakfast burrito that tastes better and is better for you?
Now, you have no excuse not to make your own. Unless you really really love McDonalds. Or you’re just lazy. Those would both be good excuses, I guess.

- 1 Whole Wheat Tortilla (I used Trader Joe’s)
- 1 Whole Egg
- 2 Egg Whites
- 1 oz. Cabot 75% Light Reduced Fat Sharp Cheddar Cheese
- 1/4 cup Red Pepper (chopped)
- 1/4 cup White Onion (diced)
- 1/2 cup Baby Spinach
- Black Pepper (to taste)
Heat non-stick pan to medium heat. Combine red pepper, spinach, and onion and cook with 1/8 cup water until tender. Set aside. Beat 1 whole egg together with the egg whites and cook in pan until eggs are fluffy. Add cheese, onion, green pepper, salt, and pepper and cook an additional 2 minutes over low heat. Scoop inside whole wheat tortilla and serve.
