I’ve seen a lot of easy asparagus recipes in my day, but I think this is one of the easiest. And it’s honestly one of the tastiest too. Asparagus doesn’t need much because it’s already a flavor-packed vegetable. Just grab a little sea salt, some good olive oil, and some fresh cracked black pepper and toss it in the oven for 15-20 minutes. It’s that simple.
Asparagus is best enjoyed when it’s grown locally. Unfortunately the asparagus season here in Michigan is only a couple months long, so I don’t eat it much in the winter because it’s shipped from halfway across the world (usually South America or Mexico).
But if you live in a warmer climate and can get it at your farmer’s market, please do yourself a favor and do so. There is no comparison between stale grocery store asparagus from Peru and asparagus grown by your local farmer.
Let’s talk nutrition for this recipe. It’ll only set you back 170 calories (for about 10 spears) and you get 4 grams of belly-filling fiber and a ton of vitamins and nutrients. Asparagus is particularly high in folic acid, potassium, and vitamins C and A. And it provides a variety of well-documented health benefits.
So go grab some asparagus from a farmer’s market near you, and experience this healthy and easy asparagus recipe for yourself.
