This cucumber yogurt dip recipe resulted from a last-minute effort to pull something together for my annual holiday work party. I used dried herbs because that’s all I had on hand, but it’s even better if you use fresh ones.
I also used a combination of fat free yogurt and reduced fat mayo with olive oil for the base. A bit of horseradish and herbs (tarragon, dill, and celery salt) added some nice flavor. And finally, the green onion and finely chopped cucumber pulled the dip all together.
I highly recommend refrigerating this cucumber yogurt dip recipe overnight to let the flavors blend together more. Serve it up with some fresh vegetables or whole wheat pita bread and you have yourself a delicious and healthy dip! I actually served it with roasted vegetables, which was delicious.
Here’s the best part. This recipe has just 64 calories per serving. Compare that to your favorite dip. You can save hundreds of calories by opting for this healthy cucumber yogurt dip over the average fat-filled dip. So try it for your next party, or make some for yourself as a healthy veggie dip alternative!
