This Asian salad recipe is one of my all-time favorites. It pairs perfectly with a carrot ginger dressing. I included instructions to make enough of the dressing for two people, but I usually make extra so I can bottle it up and use it on other salads. I highly recommend you do the same:)
If possible, get your lettuce from the farmer’s market. To find one near you, check out Local Harvest. Lettuce was out of season here in Michigan when I made this, so I used some plain ‘ole organic romaine lettuce.
Honeycrisp apple is a sweet, crunchy addition to the salty dressing and the pepitas (pumpkin seeds) add some great texture. Another bonus: pepitas contain healthy monounsaturated fats and fiber.
And best of all, this recipe weighs in at only 187 calories. It’s a great combination of fruit, vegetables, seeds, and healthy fats. It’s simple, healthy, and delicious.

Ingredients: Asian Salad Recipe with Carrot Ginger Dressing
- 4 cups romaine lettuce
- 2 T pepitas (de-shelled pumpkin seeds)
- 1 small honeycrisp apple
- 1 slice of lemon
Carrot Ginger Dressing:
- 1 T soy sauce
- 1 T lime juice
- 1 T olive oil
- 2 tsp. red wine vinegar
- 1 tsp. pickled ginger (minced)
- 1 tsp. minced carrot
- 1 tsp. minced onion
- 1/4 tsp. black pepper
Whisk the ingredients for the carrot ginger dressing together (or use a food processor or blender) and refrigerate. Rinse the romaine leaves and chop to your liking. Cut up the honeycrisp apple into bite-sized pieces and squeeze lemon juice over it (to prevent browning). Add apple pieces and pepitas to salad and top with carrot ginger dressing.
